Tasty

I tried a SBD version of pancakes this morning, even T loved them. The recipe is below for anyone who wants it. Terrell also is into hot tea lately. It is sort of cute we both get up and have a cup of tea together. I seriously love the minivan, never thought I would say those words.


1/2 C. Lowfat ricotta cheese
1 whole egg + 1 egg white
1 packet of Splenda
1/2 t. (or more) vanilla extract
1/2 t. (or more) cinnamon

Mix all of the ingredients up in a bowl and blend until very smooth.

Spray a non-stick skillet with Canola Oil Spray (the only kind I have tried and it works very well). Heat skillet to a tad above medium.

When quite hot, ladle in a 4 inch circle of the mixture. It will form small bubbles all over which need to sort of pop and the edges need to be firmed up enough to flip it. Spray a pancake turner with the Canola Oil Spray (to make flipping easier) and turn it over; repeat heating through on this side.

oh gosh, i've been away from my computer and just catching up on the last few posts. sorry you've been through so much crap with the RE and then a crappy period on top of it. i do think the crazy period is probably from the cysts, but you should let your doc know (even though he totally sucks and i hope you find a new one).

i had cyst problems whenever i was on stims so i always had to do BCPs. at my clinic, everyone also takes baby aspirin to prevent clotting. i understand your fear though. there must be some other way to get the same result without the pill?

congrats on your soccer mom status! glad you love the minivan, it sounds quite fancy!

Thanks for the pancake recipe--I will have to try it--we used to always make pancakes on Sunday mornings (I even have a video of my son making dad pancakes for Father's Day last year). Pancakes are something we have missed since we have been doing low carb stuff.

I must be anodd duck b/c pancakes just don't excite me. Maybe b/c they're too thick? Dunno.
